Cellulose as a natural material derived from wood or cotton has proven to be suitable for sausage casings as it is:
- mechanically resistant
- widens when soaked in water and shrinks when dried(which exactly meets the requirements for a tight and smooth casing without formation of wrinkles on the sausage surface)
- permeable for gases, smoke and water vapour
Cellulose casing storage conditions
Casings should be stored at 4°C to 25°C, and indoor relative humidity should be between 50% and 70%. All casings should be stored away from light. Unused casings should be put back in the box and completely sealed with plastic bags to avoid moisture loss. If the casing is exposed to the air, it will cause it to be too dry, so place it in a high-humidity cold store to maintain moisture.
